WEDNESDAY NIGHT COOK NIGHTS ♥

Every night of the week, Monday through Thursday, my family sits down to dinner together and eats. We sit and talk about our days, our plans, our pasts, and other people and events outside of our day-to-day living. Wednesday nights are my nights to cook, and each week, I try to find a dish that is different from the last so that we may experience new foods, be they from here or Pakistan. Most all of the meals I cook are very healthy and taste fresh and zesty. Tonight, I made chicken with couscous (in this case orzo), tomatoes, and hummus. It was a hit!



Here is the recipe for the meal: 

I always tend to deviate a bit from the recipe when I cook. My only differences were that I replaced the couscous with orzo pasta, cooked 5 chicken breasts instead of 4, used 2 cans of diced tomatoes, minced half of a white onion, and I prefer to make my own hummus rather than buy it.

Here is the hummus recipe I use, and it is delicious:

For the hummus recipe, I like to add about 1/8 cup more lemon juice than it calls for because it just makes it taste better.

The calorie splurge of the meal was definitely the dressing I had on my salad. It is absolutely fantastic! Usually, we have nothing but "Free (as in fat free)" dressing in the house, but my Granny brought in Virginia Brand vidalia onion vinaigrette, which understandably came highly recommended by my Aunt Ivy.

The meal served 5 people, none of who left the table hungry. If you try this meal, you won't regret it!
